We had tomato, leek and asparagus quiche; a bacon quiche; and parsnip gratin (made with goat cheese) for dinner yesterday night.
I'm going to spare you the parsnip pictures because parsnips are not very colorful or photogenic. I think everyone was kind-of in agreement that we would have preferred potatoes, but for some reason my boyfriend has been on this parsnip kick lately.
I would describe a quiche as a sort-of fluffy eggy cheese pie. It is delicious. If you've never had it, trust me! My favorite quiche is made with bacon and gruyère (cheese). It is really a brunch food, my boyfriend tells me.

Although the eggs and cream (custard) in the quiche make it have a fluffy texture, it is actually pretty heavy and filling.
Can you tell from our last two Wednesday night meals that I love eggs? I do think if I had to pick between the two, I would have the eggs benedict. But quiche is great! I definitely wouldn't turn it down. Eggs? Good! Cheese? Good! Bacon? Good!
